- 1/8 stick butter
- 3 eggs
- ½ cup ham
- 2 slices American cheese
- Melt butter in egg pan over medium-high heat.
- Beat eggs with wire whisk. Stir in ham. Pour into pan.
- As omelet starts to cook, use handle of wooden spoon to pull omelet back towards center of pan, tilting pan away from you. Continue this until omelet is no longer runny.
- Lay cheese on omelet.
Cover pan immediately and remove from heat. Let stand about one minute and serve.
To serve: Slide ½ of the omelet from pan to plate and use the side of the pan to fold other ½ over top. This omelet when served folded, should be approximately 3 inches thick and very fluffy. Many substitutes for the ham: sausage, mushrooms, vegetables and seafood.
