How to Include Veggies in Every Meal and In Home Elderly Care

Summer weather brings lighter eating and outdoor seating.  It seems easier to eat a bit healthier and to cut some of the comfort foods we had been eating through the colder months out of our diet.  Vegetables are packed with nutrients and vitamins that are very important to our bodies.  An easy way to increase healthy foods in our diet is to include vegetables in every meal. 

One easy way to include veggies in every meal is to add them to favorite dishes.  When added to a meal that is already well liked, they become just an enhancement and not the focus.  Simply grill up some peppers and onions to add to a grilled chicken or steak quesadilla.  When cooking lasagna, add in some spinach or cooked zucchini in the layers of cheese, sauce and noodles.  Veggies added to eggs for delicious and nutritious omelets are a great way to start the day.

Lighter eating is another part of summer life.  When the meal calls for a stir fry, include broccoli, asparagus, and bright colored peppers in the pan.  When stirred up with beef or chicken in teriyaki, then layered on some brown rice, you have a delicious and light meal.  It’s often best to cook the vegetables until they are slightly tender and not to let them turn to complete mush.  Sometimes the look of overcooked veggies are a turn off and make the entire dish unappealing.

When the day to day life has you out of the house more often than not, it can seem impossible to add veggies in every meal.  When faced with decisions at fast food restaurants, steer toward the salads as much as possible.  Opt for the low fat salad dressing and use just half the packet; it is usually plenty.  If a sandwich at a restaurant is an option, look for something similar to a bacon, lettuce and tomato sandwich.  It is becoming more common to find restaurants with fresh items and a sub-sandwich shop can be a great option for adding veggies in every meal.  Load up on the dark green vegetables like spinach leaves and add the tomato and onion to the sub. 

Sometimes veggies taste best when served just the way they are.  Serving carrots, broccoli, cauliflower and other crunchy veggies with a side of low fat ranch dressing are a tasty and satisfying snack. The good thing about vegetables is that you can eat as much as you want and not worry much about calories.  They are perfect for combatting weight gain and finding a trimmer waist line.  Whenever possible, choose a vegetable as a mid-afternoon snack and remember to add veggies into every meal for healthier eating.
