Cover pan immediately and remove from heat. Let stand about one minute and serve.
To serve: Slide ½ of the omelet from pan to plate and use the side of the pan to fold other ½ over top. This omelet when served folded, should be approximately 3 inches thick and very fluffy. Many substitutes for the ham: sausage, mushrooms, vegetables and seafood.
