Serves 2


  • 1/8 stick butter
  • 3 eggs
  • ½ cup ham
  • 2 slices American cheese


  1. Melt butter in egg pan over medium-high heat.
  2. Beat eggs with wire whisk. Stir in ham. Pour into pan.
  3. As omelet starts to cook, use handle of wooden spoon to pull omelet back towards center of pan, tilting pan away from you. Continue this until omelet is no longer runny.
  4. Lay cheese on omelet.

Cover pan immediately and remove from heat. Let stand about one minute and serve.

To serve: Slide ½ of the omelet from pan to plate and use the side of the pan to fold other ½ over top. This omelet when served folded, should be approximately 3 inches thick and very fluffy. Many substitutes for the ham: sausage, mushrooms, vegetables and seafood.
